It just happened to me - it seems it's because father of the groom is on a Grand Tour through his realm. And it looks like the countdown for the Grand Wedding will run down before he's available to attend. This needs fixing - I should be able to plan the wedding and then wait with its start before all attendees are available.

Note that because marriages happen immediately in CK3, your characters will technically already be married while all this is happening. There's currently no way around that so... just go with it.
