I think I would use the extra "reach", but based on prior posts and test results for the dismal Nikon 24-120 f3.5-5.6 and the 24-120 f4, I think a new Nikon Z 24-120 is a real challenge for Nikon with its 5:1 zoom ratio.There are many good TV's and some bad ones, but even within the ranks of the good ones there are differences. If I had my way I'd sell everything including the 2 dogs and the cat and my prized coffee mug, buy a slightly bigger camper and just go from one end of this hemisphere to the other.The D810 in DX mode produces a 15.4 mpx image while the D500 image will be 20.9. So the D500 gives you more pixels in a DX sized image. If the DX magnification effect is what you are after I suspect the D500 is the better choice. Regarding high ISO noise - my other body is the D4 which I will shoot up to ISO 12800.The 300 f/4 PF is about as sharp as its predecessor, which is plenty sharp for most people. The 300 f/4 PF + TC-14e III also handily beats the 80-400 at the 400mm end. Even with a TC-17e II at 500mm, I still find the 300 f/4 PF sharp enough on my D810.
