The reason some big turkey payloads pattern as well as they do is because velocity is really slow. It's not so much the choke. Take a 1 oz. 12 gauge load @ 1350 fps and push it through a "turkey" choke, it'll pattern pretty darn good because the payload is small. Good enough to kill any turkey out to 45 yards.
